Sweeteners are sweet-tasting substances which are usually used in food as a sugar substitute. They are used in the preparation of food products with a low energy value, non-cariogenic products and foods without any added sugars as well as in the preparation of dietary products.

Polyols or sugar alcohols are sweeteners with a low energy content (owing to their partial absorption in the intestine) which do not affect blood sugar levels  and do not cause tooth decay. The sweetening power is less than that of sugar. 

Intensive sweeteners are substances endowed with a high sweetening power which, owing to their dosage and nature, barely have any calorie input into the food and they are not cariogenic.
